    摘要:

    水是生命之源,但实验室和工厂有机溶剂中微量水被认定是污染。近几年来,因有机溶剂中微量水引起的工厂、实验室爆炸事件频频发生,极大地引起了社会关注,迫切需要一种便捷的方法对有机溶剂中的水含量进行测定。作为新兴发展的分析工具,荧光探针具有灵敏度高、选择性好、毒性小、实时可视化监测等优点,在化学化工、食品、环境等领域均有应用。综述了自2016年用于检测有机溶剂中水含量的有机荧光探针,及其在食品等行业中的应用;着重讨论目前广泛使用的7种识别策略,对水含量探针的开发具有一定的指导意义。

    Abstract:

    Water is the source of life, but trace water in organic solvents is considered as contaminate. In recent years, explosions caused by trace water in organic solvents have occurred frequently in factories and laboratories, which have attracted great attention from the society. Thus, a convenient method for assessing the water content in organic solvents is desired, urgently. As an emerging analytical tool, organic fluorescent probes offer high sensitivity, good selectivity, low toxicity, real-time visual monitoring and are commonly used in chemical engineering, food, environment, and other fields. This review summarizes fluorescent probes for detecting water content in organic solvents and their applications in foodstuff and other industries since 2016. It focuses on seven strategies for responding to water, which has certain guidance for the development of water content probes.
